Food Effect Friendly Matza Pizza
High in protein and fibre, packed full of antioxidants, and totally waistline friendly…
I’ve taken the classic Matzah Pizza and tweaked it to add in a ton of good nutrition, and cut down on unhealthy saturated fat, refined white carbs and calories too.
I use high fibre matza which is high in protein, low in calories and amazing for gut health.
Store bought pasta sauce with no added sugar, packed with the super antioxidant lycopene!
Light cheese which is lower in calories and saturated fat. But you can use any cheese (feta would be delicious too), or vegan cheese to make this dairy-free.
Top with veggies of your choice – here I used mushrooms and sliced tomatoes, but go wild with whatever you fancy – olives, sliced avocado, peppers, onion, tinned tuna are all delicious!
Kids go crazy for this one too! And we eat it all year round, even after Passover!

Recipe
Makes 1 (can easily double / multiply as necessary)
1 sheet wholewheat matza
Store bought tomato pasta sauce (healthy ingredients / no added sugar)
Ready grated light cheese (or any cheese of choice, feta would be delicious too)
Toppings of choice: sliced mushrooms, tomatoes, olives, red onions, red pepper, etc.
Salt and black pepper
Sriracha to serve (optional)
Preheat oven to 200C (400F). Lay matza down on a foil lined baking tray. Spread a generous amount of pasta sauce over the matza. Sprinkle grated cheese all over. Add toppings of choice. Season generously with salt and pepper. Place in the oven and grill until cheese is melted and everything is slightly browned (keep an eye on it to make sure it doesn’t burn!)
Remove from the oven. Drizzle with sriracha (optional). Serve with a big green side salad. Enjoy!
